Beef Satay Skewers


Beef Satay Skewers are my vibrant twist on a classic, where the zesty aroma of lemongrass meets tender beef in a culinary match made in heaven. These skewers are a celebration of flavors, marinated in a mixture that brings out the best in the beef with a hint of citrusy tang and a whisper of spice. Grilled to perfection, they offer a smoky char that's irresistible. Perfect for gatherings or a special treat at home, these skewers turn any meal into a festive occasion, showcasing the simple joy of cooking with fresh, aromatic ingredients

Ingredients:

  • 1 kg beef sirloin, diced into small cubes (or use 500g chicken breast and 500g chicken thigh, diced into small cubes for a chicken variation)
  • Salt, to taste
  •  5 tablespoons white sugar
  • A bit of melted beef fat or chicken fat
  • 1 stalk lemongrass, bruised

Ingredients to be finely blended with 1/4 cup of water:

  • 3 large onions
  • 10 cloves garlic
  • 5 dried chillies (soaked in hot water and deseeded)
  • 5 cm fresh turmeric
  • 5 stalks lemongrass
  • 3 cm galangal
  • 3 cm ginger
  • 3 teaspoons fennel seeds
  • 3 teaspoons cumin seeds

Instructions:

  1. Combine the onions, garlic, dried chillies, turmeric, lemongrass, galangal, ginger, fennel seeds, and cumin seeds in a blender or food processor and blend until smooth.
  2. Thoroughly clean the beef (or chicken, if using) and marinate with the blended spice mixture. Season well with salt and sugar to enhance the flavors. Allow it to marinate overnight to let the spices fully permeate the meat.
  3.  Carefully thread the marinated meat cubes onto skewers, ensuring not to overcrowd them to promote even cooking.
  4. Grill the skewers over medium heat until the meat is beautifully charred and cooked through, turning occasionally. Use the bruised lemongrass stalk dipped in melted fat (beef or chicken, corresponding to the meat used) to baste the skewers periodically, keeping them moist and flavorful.
