Ingredients:
- 4 egg whites
- 250g caster sugar
- 1 tsp white vinegar
- 1 tsp cornstarch
- 30g freeze-dried Red Dragon Fruit, powdered
- 200ml whipping cream
- Fresh kiwi and dragon fruit slices, for topping
Instructions:
- Preheat oven to 120°C (250°F). Line a baking sheet with parchment paper.
- Beat egg whites until soft peaks form. Gradually add sugar, then vinegar and cornstarch, beating until stiff peaks.
- Gently fold in half the dragon fruit powder.
- Spoon meringue onto prepared sheet in a circle, creating a well in the center.
- Bake for 1.5 hours or until crisp. Cool in the oven with the door slightly open.
- Whip cream until stiff, then fold in the remaining dragon fruit powder.
- Fill the meringue with dragon fruit cream and top with fresh fruit slices.
