Ingredients:
- 4 grams fresh Korunui Gourmet Vanilla Beans (approximately 2 medium beans)
- 1 cup (240ml) vodka or any neutral spirit (the alcohol content should be at least 40% to effectively extract the flavour)
Instructions:
- Split the vanilla pods lengthwise with a sharp knife, leaving an inch connected at one end to keep the pod as one piece.
- Scrape out the seeds using the back of your knife.
- Place the split pods and scraped seeds into a clean glass bottle or jar.
- Pour the vodka over the pods, ensuring they are completely submerged. If they float, you can cut them into smaller pieces.
- Seal the jar tightly and shake gently to mix.
- Store the jar in a cool, dark place for at least 2 months, shaking it gently every week or so. The extract will darken over time and develop a rich flavor.
- After 2 months, you can strain the extract to remove the pods and seeds or leave them in the jar to continue strengthening the flavor. Store in a cool, dark place.
