  1. Soak gelatin leaves in cold water until soft.
  2. Split the vanilla beans lengthwise and scrape out the seeds.
  3. In a saucepan, heat coconut milk, milk, Holland Papaya powder, vanilla seeds, and sugar until sugar dissolves and mixture is hot. Remove from heat.
  4. Squeeze excess water from gelatin leaves and stir into the hot milk mixture until dissolved.
  5. Pour into molds or glasses and refrigerate until set, about 4 hours.
  6. Serve with a garnish of rehydrated Holland Papaya pieces if desired.
