Ingredients:
- 25g freeze-dried Holland Papaya, powdered
- 400ml coconut milk
- 100ml milk
- 100g sugar
- 3 gelatin leaves (or 1.5 tsp gelatin powder)
- 1/2 fresh Korunui Gourmet Vanilla bean (or 1 tsp vanilla extract)
Instructions:
- Soak gelatin leaves in cold water until soft.
- Split the vanilla beans lengthwise and scrape out the seeds.
- In a saucepan, heat coconut milk, milk, Holland Papaya powder, vanilla seeds, and sugar until sugar dissolves and mixture is hot. Remove from heat.
- Squeeze excess water from gelatin leaves and stir into the hot milk mixture until dissolved.
- Pour into molds or glasses and refrigerate until set, about 4 hours.
- Serve with a garnish of rehydrated Holland Papaya pieces if desired.
