Rose's Peanut Sauce
Peanut Sauce is my special dish that I love to make when I'm feeling joyful. It's a creamy concoction of roasted peanuts blended with a mix of spices that just brings warmth and happiness to any meal. For me, it’s more than just a sauce; it's a way of spreading joy and elevating simple dishes into something extraordinary. Whether it's accompanying skewers, brightening up salads, or adding depth to wraps, my Peanut Sauce is a reflection of the happiness I feel in the kitchen, making every meal a little celebration.
Ingredients:
- 1 kilogram of roasted peanuts
- 10 dried chillies, pre-soaked in hot water and pureed (lesser or more according to your heat preferences)
- 2-3 segments of palm sugar
- 1 small bowlful of tamarind extract
- Salt, to personal preference
- 2 cans coconut cream
- 2-4 cups of water
For Finely Chopped Mixture:
- 5 large red onions
- 7 garlic pods
- 2 inches of fresh ginger root
- 2 inches of galangal root
- 4-5 stems of lemongrass
Cooking Instructions:
- Toast the peanuts until they are crisply browned, then let them cool. After cooling, grind them to a coarsely textured powder. Never powder the peanut. Alternatively, purchase a ready roasted unsalted peanut.
- In a minimal amount of oil, gently fry the onions, garlic, ginger, galangal, and lemongrass until they become fragrant. Take these out and blend into a fine paste with a bit of added water for smoothness.
- Warm up about three tablespoons of oil in a saucepan and stir in the aromatic paste along with the chilli puree. Cook until the oil begins to separate from the chilli paste.
- Fold the crushed peanuts into the saucepan, pouring in water bit by bit until you reach the sauce’s desired consistency. Allow it to simmer until it starts to boil lightly.
- Sweeten with palm sugar, sour with tamarind extract, and season with salt according to your taste. Continue to simmer the sauce until it visibly thickens and the oil floats to the top, indicating it’s ready to serve.
