Sweet & Sour Chicken with Calamansi Sauce is my go-to dish for a burst of vibrant flavors. This dish is a lively dance of tangy calamansi juice and the classic sweet and sour blend, enveloping tender chicken pieces in a sauce that’s both exhilarating and comforting. The unique citrus twist of calamansi adds an exotic flair, transforming a familiar favorite into an exciting culinary adventure. Ingredients:

  • 500g chicken breast, cubed
  • 1 tbsp soy sauce
  • 1 tbsp cornstarch
  • 2 tbsp vegetable oil
  • 1 bell pepper, diced
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1/4 cup calamansi juice
  • 1/4 cup rice vinegar
  • 1/4 cup brown sugar
  • 2 tbsp ketchup
  • 1 tbsp soy sauce
  • Salt and pepper to taste
  • Steamed rice, for serving

Instructions:

  1. Marinate chicken with 1 tbsp soy sauce and cornstarch for 15 minutes.
  2. Heat oil in a pan over medium heat. Add chicken and cook until browned. Remove and set aside.
  3. In the same pan, sauté bell pepper, onion, and garlic until softened.
  4. Add calamansi juice, rice vinegar, brown sugar, ketchup, and 1 tbsp soy sauce. Bring to a simmer.
  5. Return chicken to the pan and coat with the sauce. Cook until the sauce has thickened.
  6. Season with salt and pepper. Serve with steamed rice.
