Durian Fried Rice

Ingredients:

  • 1 tbsp vegetable oil
  • 2 cups cooked rice, chilled
  • 20g freeze-dried Musang King Durian, rehydrated and mashed
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 2 eggs, beaten
  • 2 tbsp soy sauce
  • Spring onions, for garnish

Instructions:

  1. Heat oil in a pan over medium heat. Sauté onion and garlic until translucent.
  2. Add rehydrated durian and cook for 1 minute.
  3. Push durian to one side, add eggs to the pan, and scramble.
  4. Add rice, breaking any clumps. Stir-fry and mix well with durian and eggs.
  5. Season with soy sauce, stir until evenly colored.
  6. Serve hot, garnished with spring onions.
