Durian Mousse

  • 30g freeze-dried Musang King Durian, powdered
  • 200ml heavy cream
  • 50g sugar
  • 2 gelatin leaves (or equivalent gelatin powder, as per packet instructions)
  • 100ml milk

Instructions:

  1. Soak gelatin leaves in cold water until soft.
  2. Warm milk in a saucepan, then dissolve squeezed gelatin and durian powder in milk.
  3. Whip heavy cream with sugar until soft peaks form.
  4. Gently fold the durian milk mixture into whipped cream.
  5. Pour into serving glasses and chill for at least 4 hours.
