Homemade Vanilla Extract

Ingredients:

  • 4 grams fresh Korunui Gourmet Vanilla Beans (approximately 2 medium beans)
  • 1 cup (240ml) vodka or any neutral spirit (the alcohol content should be at least 40% to effectively extract the flavour)

Instructions:

  1. Split the vanilla pods lengthwise with a sharp knife, leaving an inch connected at one end to keep the pod as one piece.
  2. Scrape out the seeds using the back of your knife.
  3. Place the split pods and scraped seeds into a clean glass bottle or jar.
  4. Pour the vodka over the pods, ensuring they are completely submerged. If they float, you can cut them into smaller pieces.
  5. Seal the jar tightly and shake gently to mix.
  6. Store the jar in a cool, dark place for at least 2 months, shaking it gently every week or so. The extract will darken over time and develop a rich flavor.
  7. After 2 months, you can strain the extract to remove the pods and seeds or leave them in the jar to continue strengthening the flavor. Store in a cool, dark place.
